Pumpkin Oatmeal

This pumpkin oatmeal is warm, creamy, and full of cozy fall flavor. The mix of pumpkin puree, maple syrup, and gentle spices like cinnamon and nutmeg makes it taste like a slice of pumpkin pie for breakfast. It’s the perfect comforting start to a cool autumn morning.

  • 1 cup of rolled oats
  • 1 1/2 cups Coconut or almond milk
  • 1/2 cup pumpkin puree
  • 2 tablespoons of maple syrup
  • 1/4 teaspoon kosher salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 teaspoon ground nutmeg
Add the oats and milk to a large microwave-safe bowl. Choose one with extra room since the mixture will rise and bubble while cooking. Microwave on high for about two minutes, or until the oats are soft and creamy. Cooking time can vary slightly depending on your microwave, so keep an eye on it to prevent overflow.

Carefully remove the bowl from the microwave using oven mitts, as it may be hot. Stir in the pumpkin puree, maple syrup, cinnamon, ginger, nutmeg, and a small pinch of salt. Mix until the oats take on a rich golden orange color and the spices are evenly blended.

Taste and adjust the seasoning if you prefer a stronger hint of spice or sweetness.
